For the leaner cut of Tenderloin or that Fillet Mignon, many people prefer a Red wine from Burgundy. This is similar to applying a sauce infused with fruit or berry flavors to a leaner kind of meat such as duck and venison for example. Those who prefer their steaks cooked rare or medium-rare often order a 20- or 30-year-old red wine. One should realize that very few wine regions in the world produce wines that are designed to age this long.
