Macau Sole (half fish per person)
1999 Chablis Vaillon 1er Cru, Lamblin et Fils
these small flounders are found in the half-half (river meets the sea) waters outside of Macau; unlike many sole fish, they do have that earth taste common to sole fish but instead they are small and very delicious; if you like Rainbow Trout, you'd love this little guy, too bad we can't find them here
Roasted Duck Breast

Nice juicy duck breast from China, good consistency, fat to meat ratio and gamey flavors
